I’ve been shooting little ones and families but I hadn’t done a senior yet. So when the opportunity arose- I nabbed it.

We had a funny time walking around with my giant reflector, heavy bag stuffed full of my rad gear, trying to beat traffic to cross streets, clothing changes and she in her fancy duds and heels getting a few admiring passerby smiles. :)

I lost a lens cap…somewhere…never did find it. But oh so worth it! Amanda rocked her session!

I had a really great time and Amanda was lovely and sweet and so, so easy to work with. Thank you L Family for trusting me with so many of your family’s memories.

Pumpkin Pecan Crunch Cake

So easy!

Preheat oven to 350 F. Lightly Grease an 9×13 pan (I use glass pans).

In a large mixing bowl combine:

a lrg can pumpkin

1 can sweetened condensed milk**

3 eggs

1  1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp cloves

1/2 tsp allspice

1/2  tsp salt

1 tsp vanilla

(or sub in 3-4 tsp pumpkin pie spice for all the spices. depends on how spicy you like it.)

Mix well. Pour into lightly greased pan.

Evenly cover the pumpkin mix with a box of butter flavored or yellow cake mix. Then top with 2 cups chopped pecans.

Drizzle over this 1 cup melted butter.

Bake for approximately 1 hour.

We eat it warm with vanilla ice cream. Warm with whipped cream. Or cold the same way. 😀

I usually serve it upside down. With the pecan crumb topping on the bottom, pumpkin on top then place whipped cream on top. Like pie. 😉

**A substitute you can make is using 1 can evap milk +  1 1/2 cups to 2 cups sugar (I go for less sweet personally) in place of the sweetened condensed milk. It tastes nearly the same only the pumpkin mix is softer set after baking.

And since I am a recipe tweaker and figure some of you might be too:

…if you like your pumpkin to set firmer and you like your pumpkin ratio to be more equal to the pecan crumb topping you can use a 15 oz can pumpkin instead of the large one without making ANY other changes to the recipe. Just use 1 1/2 cups sugar- not 2. 😉

(can you tell I have made this recipe a lot and experimented a lot?)

introducing nikko

ok so maybe i’m a little weird. i’m actually ok with that. more than ok really. weird is interesting. well weird can be just …well weird…but i don’t think i’ve hit that level…umm yet?

😛 i have 4 kids. 3 cats. 1 rottweiler. 4 alligator lizards. and then whatever other strays the kids bring in for the day…baby snakes, bugs of all kinds…

i first spotted the baby bearded dragons in the pet store. now before i go further i have to confess less than a year ago lizards gave me the creepy crawlies. like bad.

but the kids catching 50 trillion of them a day when we moved to the country…well i guess they grew on me.

so back to the baby dragons. have you ever seen how cute they are? like little curious puppies.

for 6 months i literally pined for one. but i decided to wait those 6 months to see if i did really want one or i just thought they were cute and got tired of them.

ok so i not only did NOT get tired of them. as time passed i found that i wanted one EVEN more.

i had done my research too.

the cost to start up is pretty high. like REALLY high. the dragon is the inexpensive part really. and you have to be ok with bugs. i am kinda girly about things like that but i knew i would have to be ok if i ever got one.

well my birthday was in august and my hubby said go get one amy beth. it’s your birthday. just about in tears i grabbed my kids and took them with me.

i am still as excited about him today as i was that day. he is SO strinking FUN. he is to me anyway.

this was him when i first got him.

ok so not the best picture. but it’s one of the few i hurriedly grabbed when i first set up his vivarium.

goodness i think he weighed about 12 grams MAYBE when i brought him home.

those were taken early september before his first shed. he is now going through his second shed. and starting to eat better (they don’t feel so hot when they begin molting)

and here he is from today. now non-reptile peeps might think he is NOT cute but i happen to think he is SOOOO stinking adorable. he snuggles and sleeps on me. he’s pretty rad.

i think he is about 3 1/2 months old or so. the little ‘spot’ on his mouth is a berry stain. licking blackberries. they like darky leafy greens and some non citrus fruits in addition to their buggy diet.

did i skurr you away yet? hahaha most people get puppies. i wanted a baby dragon. i have seen what these little guys grow into and i actually think they are equally as awesome.

watching him grow already- has been fun. unfortunately what has not been fun is that he has developed pseudo gout. not something that has anything to do with his care by me. it’s metabolic and not typical. basically don’t buy these guys from a pet store- buy from reputable breeders if you can. 😉

but i love him (or her. don’t know his sex yet until he’s a little bigger) and don’t regret adopting him. giving him daily medications for his painful pseudo gout and hopefully nursing him back to normal health in several months. 😀

anyway…thanks for meeting my baby nikko-nik.

nikko … was absolutely derived from Nikon. haha i’m so predictable. 😛

yay so it’s fall! i’m ready to pick up my camera and shoot pumpkins and red leaves and scarves and pies and everything autumn-ish.
